Hemp Date Energy Bites

I made these recently for an event at DEFINE: Body and Mind. They are the perfect pick-me-up packed with nutrition and texture. My inspiration was my favorite Larabar these days, Chocolate Chip Cherry Torte. I added hemp protein, which contains all eight amino acids and is easier to digest than other proteins, especially soy.  I replaced chocolate chips with raw cacao nibs, a superfood that is known to increase energy, improve mood and diminish appetite. This gave a great nutty cocoa flavor to the mix. Raw, vegan, gluten free, and easy to make! Everyone will enjoy these bites. You can also shape them into bars and store in the fridge. Nothing better than your own homemade Larabar.

Hemp Date Energy Bites

1 cup raw cashews

1/4 cup hemp protein powder

2 cups pitted dates, packed

1/2 cup dried cherries, packed

2 Tbsp agave nectar

pinch sea salt

1/4 cup raw cacao nibs

Grind cashews and hemp protein powder in a food processor until chopped. Add the dates and the cherries and run the food processor until the mixture starts to get uniform and sticks together between your fingers easily. Add the agave and sea salt and process a bit more. Add in the cacao nibs and pulse a few times until combined.

Using a small cookie dough or ice scream scooper, shape into balls and place on a wax paper lined cookie sheet. Refrigerate for at least 30 minutes before serving. Kept best in the refrigerator.

Yields: about 18- 20
