Cranberry Cashew Orange Energy Bites

Another version of my Hemp Protein Energy Bites, this recipe is a bit brighter in flavor. The fresh orange zest really helps to add an energizing element and is perfect for a pick-me-up snack.  The measurements are forgiving, just pulse ingredients in the food processor starting with the nuts until it starts to combine and stick together when pinched between your fingers. Feel free to play around with other dried fruit or nuts and let me know what you come up with!

Cranberry Cashew Orange Energy Bites

1 cup raw cashews

2 cups pitted dates, packed

1/2 cup dried cranberries, packed

2 Tbsp agave nectar

pinch sea salt

2-4 Tbsp zest from an orange

Grind cashews in a food processor until chopped. Add the dates and the cranberries and run the food processor until the mixture starts to get uniform and sticks together between your fingers easily. Add enough agave, orange zest, and sea salt to your liking and process a bit more until combined.

Using a small cookie dough or ice scream scooper, shape into balls and place on a wax paper lined cookie sheet. Refrigerate for at least 30 minutes before serving. Kept best in the refrigerator.

Yields: about 18- 20
