Chocolate Goji Granola


Glorious superfoods start your morning off right in this crunchy granola sweet. Cacao, goji, and chia seeds give this recipe a powerful punch of antioxidants, fiber, iron, protein and healthy omegas. The subtle chocolate-y undertones from the cacao pairs perfectly with the nutty almond slices, toasted oats and bright flavor from the goji berries.  Sprinkle atop coconut yogurt, a fruit smoothie or splash in your favorite nut milk. Any way you slice it, this one’s a winner. 

Chocolate Goji Granola

[Yield: About 6 servings]

 2 cups rolled oats

1/2 cup almond slices

1/2 cup shredded coconut

1 Tbsp chia seeds

2 Tbsp palm sugar

1/3 cup cacao powder

3 Tbsp coconut oil

1/4 cup coconut nectar

1/2 tsp vanilla

pinch sea salt

1 cup goji berries

Preheat oven to 325 degrees F.

Combine dry ingredients in a large bowl, except for the cacao powder and the goji berries.

In a medium bowl, combine the wet ingredients. Stir in the cacao powder until a smooth chocolate sauce is formed. Pour the chocolate mixture into the dry ingredients and stir or massage together with hands.

Spread over a large baking pan. Bake about 20 minutes or so, tossing half-way through. Remove from the oven and toss in the goji berries. Allow to cool completely before serving. Store in glass jars. Remains fresh for a couple of weeks.
