Heirloom Lettuces with Miso-Tahini

This has been my go-to simple salad for the season. Find the freshest veggies that your farmer’s market has to offer. Heirloom lettuces, sunflower sprouts and tomatoes made this bowl. Top it off with miso-tahini heaven and crushed toasted sesame + dulce, and you’ve got yourself a crunch-y fresh start to any meal!

Heirloom Lettuces with Miso-Tahini

1/4 cup tahini

1/4 cup sweet miso

1/3 cup hot water

1 tsp apple cider vinegar

extra virgin olive oil

sea salt

freshly ground black pepper


Heirloom lettuces, torn into bite-sized pieces

sunflower sprouts, chopped into bite-sized pieces

yellow cherry tomatoes, halved

To make the dressing, mix together the tahini, miso, cider vinegar and water in a small bowl. Whisk in the olive oil in a slow stream until it meets the consistency of your liking. It should drizzle nicely off of a spoon. Season with a pinch of sea salt, if desired.

Place the lettuce, tomato and sprouts in a bowl and toss with the dressing. Top with freshly ground black pepper and Gomasimo*. Serve immediately.

*You can make your own Gomasio by grinding toasted sesame seeds with dulce flakes or toasted nori with a mortar and pestle. A great condiment for many dishes, like stir-fries, grains, beans and salads!
